Air fryer yellow squash and zucchini may indeed be my new obsession. I’m not gonna lie, I have been slightly intimidated by the air fryer in my cabinet. I asked for it for Christmas, and I received it, but I have been nervous about learning how to use a new appliance! Well, friends, I have conquered my fears and this air fryer yellow squash and zucchini makes it so worth it. I may never go back to working with hot, popping oil on my stovetop, especially in the hot summer time.
The easy clean up of the air fryer alone makes it worth it! I hope this becomes one of your favorite air fryer recipes! You can easily replace any of the summer squash varieties to make this easy low carb snack, perfect snack, and low calorie dish.
Here are a few questions you may be wondering about with your air fryer.
Which air fryer should I use?
I have the Chefman Air Fryer. Mine is the smaller version but the same concept. When you are shopping for your air fryer, make sure you check the size of the air fryer basket to ensure it works to feed your entire family.
How do I clean my Air Fryer?
Air Fryer vegetables cleaning is the best thing ever! Just thoroughly clean the air fryer basket with soapy water and dry completely before using it the first time. The basket is dishwasher safe, best to clean in the top row.
How do I prep the squash and zucchini for the air fryer?
The prep for frying yellow squash and zucchini is simple. Just wash thoroughly and cut off top stem and bottom. I slice mine at an angle in about 1/2″ round slices and then quarter them. It is thin enough to cook quickly but thick enough to withstand the cooking without turning to mush. Also, make sure you place the squash and zucchini slices in a single layer for the best results.
I coat the squash and zucchini in about 1 tablespoon of olive oil and then add salt, pepper, and garlic powder (you can sub onion powder too) in a large bowl. The cooking process is just to simply add the veggies to the basket and start cooking time! You can also slice the squash and zucchini in a rectangular shape for the perfect way to make air fryer zucchini fries. They are a great side dish substitute for french fries
How long and at what temp do I cook the squash and zucchini in the air fryer?
I preheat my air fryer for about 4 minutes at 400 degrees and spray with olive oil spray (check yours for preheating directions.) Put the veggies in the basket and set the cooking time for 15-20 minutes. You will want to check the squash and zucchini periodically and shake the basket of the air fryer to distribute them well. You may need an additional 5-10 minutes, depending on the amount of veggies you add and the size of your basket.
How do I finish the air fryer squash and zucchini?
After the veggies are slightly browned, I pull them out of the fryer and immediately top them with shredded Parmesan cheese. Delish! All of our kids love squash and zucchini served this way – even our picky toddler! Simple ingredients become delicious in a short time in the air fryer.
What do I serve the squash and zucchini with?
I love to serve air fryer squash and zucchini with chicken or salmon, along with the perfect side dish of a fresh salad or roasted potatoes. This is a delicious, easy recipe, and a healthy weeknight meal! Store any leftovers in an airtight container. If you would like other vegetables to try, consider air fryer-roasted broccoli or air fryer-roasted carrots. Enjoy the recipe card below!
