How do I make Easy Banana Muffins with Bisquick?
This recipe comes together in just a few simple steps. First, start with mashing the overripe bananas in a large bowl. Bananas will be easier to mash if they are at room temperature, so allow them to soften if they have been frozen. Heat oven to 400 degrees. Then, simply add the egg, oil, cup of sugar, and Bisquick baking mix.
The baking mix includes leavening agents, so you will not need to add additional baking soda or baking powder. You don’t even need a pastry cutter! Blend the sugar mixture lightly, without overbeating. Add flaxseed and chocolate chips, if you like. If you have an abundance of blueberries, you could also add these to the banana muffins.
Put into lined or sprayed muffin tins and bake at 400 degrees for 12-14 minutes. If you want an added indulgence, add a layer of melted butter to the top of each muffin. - 1 1/2 c Bisquick mix
- 1/2 tsp cinnamon optional

Instructions
- Beat egg slightly. Stir in oil, sugar and mashed bananas. Add Bisquick mix, cinnamon, and flaxseed and stir just until liquid and dry ingredients are combined. Fold in chocolate chips. Fill greased or paper lined muffin pans. Bake at 400 degrees for 18-20 minutes. Makes 12 muffins.
