Easy Banana Muffins with Bisquick

If you are looking for an easy banana muffins with Bisquick recipe, you are in the right place! These muffins are simple to make, delicious and perfect for an easy breakfast or quick snack after school. I even sneak in some ground flaxseed which my kids don’t seem to notice! This is the perfect recipe if you have some overripe bananas or extra bananas on your counter. This recipe makes the fluffiest muffins and is one of our favorite recipes.

This is the perfect quick breakfast and one of the simplest banana bread recipes. If you aren’t ready to make Bisquick muffins yet, just put the ripe, mushy bananas in a zip bag in the freezer until you are ready to make the Bisquick banana muffins. Check out all the ingredients you need and all the steps below.

What ingredients are needed for Easy Banana Muffins with Bisquick?

Ingredient List

  • Bisquick or store brand baking mix
  • 2-3 ripe bananas
  • egg
  • sugar (white or brown sugar)
  • vegetable oil
  • cupcake paper liners
  • cupcake pan
  • chocolate chips (optional)
  • 1 teaspoon cinnamon (optional)
  • ground flaxseed (optional)
  • 1 tsp vanilla (optional)

How do I make Easy Banana Muffins with Bisquick?

This recipe comes together in just a few simple steps. First, start with mashing the overripe bananas in a large bowl. Bananas will be easier to mash if they are at room temperature, so allow them to soften if they have been frozen. Heat oven to 400 degrees. Then, simply add the egg, oil, cup of sugar, and Bisquick baking mix.

The baking mix includes leavening agents, so you will not need to add additional baking soda or baking powder. You don’t even need a pastry cutter! Blend the sugar mixture lightly, without overbeating. Add flaxseed and chocolate chips, if you like. If you have an abundance of blueberries, you could also add these to the banana muffins.

Put into lined or sprayed muffin tins and bake at 400 degrees for 12-14 minutes. If you want an added indulgence, add a layer of melted butter to the top of each muffin. Cool on a wire rack to avoid any soggy surface. If you have some leftover banana muffins, be sure to store them in an airtight container.

This original recipe will yield about 12 regular sized muffins.

This Bisquick banana bread recipe also makes delicious mini muffins that my toddler loves. Simply use 24-count mini muffin pans and divide batter evenly into muffin cups. It is an awesome snack from just a little bit of effort!

Can I add other ingredients?

Of course! You can add any other ingredients that you like, including raisins, cranberries, blueberries, peanut butter chips, or anything that your creative heart desires!

How do I make sure the muffins are moist?

To ensure your muffins are moist, make sure to use the ripest bananas you can find. This is a great way to use up overripe bananas or even snag some from your grocery store at a reduced price. Choose oil versus butter to make sure you have moist muffins. Also, be careful to mix ingredients gently to keep from overmixing.

What can I substitute for bananas?

If you do not have bananas around, you could substitute applesauce for the banana mixture. Of course, you will not have the banana flavor, but the end result is still delicious!

Is it better to add oil or butter for banana muffins?

I prefer to use oil for banana muffins for a more moist result. Of course, you can sub butter for a richer flavor, but it will make a denser end result.

Yes, you can definitely freeze banana muffins. Simply wrap carefully and store in a freezer gallon zip bag. Also, consider freezing your chocolate chips and flaxseed to ensure freshness the next time you need them.

Ingredients
  

  • 1 egg
  • 1/3 c oil
  • 1/2 c sugar
  • 1 c mashed ripe banana (2-3)
  • 1 1/2 c Bisquick mix
  • 1/2 tsp cinnamon optional
  • 1 tsp milled flaxseed optional
  • 1/4 c mini chocolate chips optional

Instructions
 

  • Beat egg slightly. Stir in oil, sugar and mashed bananas. Add Bisquick mix, cinnamon, and flaxseed and stir just until liquid and dry ingredients are combined. Fold in chocolate chips. Fill greased or paper lined muffin pans. Bake at 400 degrees for 18-20 minutes. Makes 12 muffins.
