This is one of my favorite Weight Watchers recipes, as it is easy to prep, multiply and store throughout the week. In fact, I usually double the recipe and use the leftovers for a quick low point lunch option throughout the week. It only gets better over time as the flavors deepen. It is perfect for green plan, blue plan and purple plans. With so many zero points ingredients, this hearty soup keeps you filled without using up many of your daily points!
What ingredients are in Weight Watchers Taco Soup?
WW taco soup consists of several simple ingredients, many of which you probably have in your pantry. Sauté some lean ground beef or lean ground turkey with a large onion diced. Pour in two cans of diced petite tomatoes, one can of corn, two cans of beans (black beans, pinto beans, kidney beans), and a packet of taco seasoning, give it a good stir, and this hearty soup is ready to simmer! (You can also use hot chili beans, if your family prefers a little spice.) You can just place it all in the slow cooker or a large soup pot on the stove top and let it simmer for an easy dinner recipe with low points!
Some recipes also call for a packet of dry Ranch dressing mix. This is a good addition, however, I try to watch our salt intake, so I usually do not include it and the soup tastes just as delicious! How do you thicken taco soup?
I don’t use any additional thickener for taco soup. You can add a tablespoon or two of tomato paste if you would like a thicker soup. I simply add the liquid from the beans, corn, and tomatoes and that tends to be plenty to thicken the soup, along with the ground beef and onions. It will also thicken more the longer it simmers.
How long does taco soup last?
Taco soup will last 3-5 days in the fridge, properly covered and stored in an airtight container. It can also be frozen and defrosted at a later time. I find it easiest to store soup in gallon storage freezer bags. Be sure to rid the bag of air before storing.
How much prep time is required?
After the meat and onion is sautéed, you can add the canned ingredients and allow to simmer. It would be best to simmer at least 20 minutes, however, it can simmer all afternoon. I generally prep mine mid-afternoon and let it cook for the rest of the day.
You can also sauté ground beef and onion ahead of time to make for an easier dinner prep.

Of course, we eat taco soup at home fairly often, but I also find it the perfect recipe when we travel. It is easy to grab the ingredients at the store to prep while we are on vacation. The prep does not require many kitchen utensils or cookware, so it is a simple choice while traveling or camping.
How do I make Weight Watchers taco soup?
Simply sauté the ground beef and onion together in the olive oil. After browned, drained, if needed, and add all canned ingredients with their liquid. Add taco seasoning pack and stir well. Allow to simmer for at least 20-30 minutes. It can simmer for several hours.
Where do you shop for taco soup ingredients?
I generally shop for ingredients at Costco, Aldi and Wal Mart. I find the multipack option for tomatoes, beans and corn to be a great option at Costco. If you buy ground meat at Costco, be sure to separate and store the meat into smaller bags to defrost easily. Beans, tomatoes and corn are essential pantry ingredients that I always buy in multiples to keep on hand.

Weight Watchers Taco Soup
Ingredients
- 1 onion small, diced
- 1 tsp olive oil
- 1 lb ground beef or turkey lean
- 2 cans diced tomatoes
- 1 can corn
- 1 can kidney beans
- 1 can black beans
- 1 packet taco seasoning
Instructions
- Heat oil and saute onion.
- Add ground meat to the onion and brown. Drain, if needed.
- Add all canned items. You do not need to drain beans and veggies, but you can drain black beans if you prefer.
- Add taco seasoning and stir well.
- Allow to simmer a minimum of 20 minutes, up to 4 hours.
- Top with chips, avocado, cheese, and/or sour cream.
