Easy Stovetop Squash Casserole

Ingredients
  

  • 4 large squash diced
  • 1 large onion diced
  • 2 tbsp butter
  • 1/2 c water
  • 1/2 tsp Italian seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 cup sour cream
  • 1/2 cup cheddar cheese shredded
  • 1/2 cup Parmesan cheese
  • 10-12 Ritz crackers crumbled

Instructions
 

  • Slice onion and yellow squash. Add 1/2 cup water to Dutch oven and add salt, pepper, Italian seasoning, and garlic powder.
  • Boil onion and squash until fork tender, 10-12 minutes.
  • Remove from heat. Add sour cream, butter, shredded cheddar cheese, Parmesan cheese, and Ritz crackers.
  • Serve warm!
