Italian Cupboard Soup

This delicious soup combines pork, tomatoes, cheese and white beans to make a filling and comforting meal, all in one pot!

  • 1 T olive oil
  • 1 medium onion diced
  • 3-4 pork chops diced
  • 2 cans diced tomatoes no salt
  • 2 cans Northern white beans
  • 2 cans chicken broth reduced sodium
  • 1 can whole kernel corn
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 2-3 c fresh spinach
  • 1-2 c parmesan cheese shredded


  • Sauté diced onion in olive oil. Add pork when onion is translucent and sauté with pepper, salt and garlic powder.
  • Add all canned ingredients. You do not need to drain canned items.
  • Allow to simmer a minimum of 20-30 minutes. Add spinach at the end of cooking time. It will wilt down.
  • Serve with a sprinkling of parmesan cheese and fresh bread. Enjoy!
