Weight Watchers Taco Soup
Delicious and healthy taco soup that is both low in points and filling, perfect for any night of the week!

- 1 onion small, diced
- 1 tsp olive oil
- 1 lb ground beef or turkey lean
- 2 cans diced tomatoes
- 1 can corn
- 1 can kidney beans
- 1 can black beans
- 1 packet taco seasoning
Heat oil and saute onion.
Add ground meat to the onion and brown. Drain, if needed.
Add all canned items. You do not need to drain beans and veggies, but you can drain black beans if you prefer.
Add taco seasoning and stir well.
Allow to simmer a minimum of 20 minutes, up to 4 hours.
Top with chips, avocado, cheese, and/or sour cream.
