What ingredients are needed for this easy stovetop squash casserole recipe?
Easy stovetop squash casserole has pretty simple ingredients. This is our favorite way to eat yellow squash and even our kids are excited to see this great side dish on the dinner table. Easy peasy and a family favorite – add this delicious side dish to your recipe box!
- 4 large yellow squash, sliced
- 1 large yellow onion, diced
- 2 tablespoons butter
- 1/2 cup water
- 1/2 tsp. Italian seasoning
- 1/2 tsp. garlic powder
- 1/2 tsp black pepper
- 1/2 teaspoon salt
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/2 cup Parmesan cheese
- 1/2 sleeve buttery crackers (Ritz)

How do you prep easy stovetop squash casserole?
If you are used to prepping southern yellow squash casserole which usually calls for stuffing mix or cornbread stuffing, eggs, cream of chicken soup, or cream of mushroom soup, this one is a bit different. For this recipe, simply slice your yellow squash and sweet onion. Add it to a Dutch oven or a large skillet with 1/2 cup water. Add salt, garlic powder, pepper, and Italian seasoning. You do not want to add too much liquid to avoid having mushy squash – yuck! Allow the squash mixture to come to a boil over medium heat and allow to steam with the lid on for about 10 minutes or until squash and onion are fork tender.

What do I do after the squash mixture is tender?
After the squash and onion mixture is fork tender, remove from heat and drain any excess water. You can transfer the mixture to a large bowl or simply add the other ingredients directly into the large saucepan, skillet, or Dutch oven.

Add sour cream, butter, shredded cheddar cheese, Parmesan cheese, and a half sleeve of crumbled Ritz crackers (about 10-12 crackers). This sour cream mixture will make the creamy sauce that makes this one of the great recipes for yellow squash! Hopefully, your family will give it rave reviews!

Do you have to peel yellow squash?
No, you do not need to peel yellow squash before slicing. Simply clean the skin of the veggie well and slice it up! The skin will give better color and added nutrients, along with helping to hold the squash together while cooking. Since squash has a high volume of water, it will fall apart without the peel.

Since squash casserole recipes are so versatile, they pair well with any main dish. Some of my favorites include a hamburger casserole made with ground beef, a rotisserie chicken, or a delicious chili made with ground turkey.

What can you do with easy stovetop squash casserole leftovers?
One of my favorite things to make with easy stovetop squash casserole leftovers is to reheat it in a cast-iron skillet. The best way is to simply add the squash casserole to a greased casserole dish or cast iron skillet with a little oil or a little bit of butter. Cover the casserole with a few more crumbled Ritz crackers, some extra cheese, and a couple of tablespoons of butter, and place it in a preheated oven of 400 degrees. Then, bake for 10-15 minutes or until the top is golden brown. You have another delicious finished dish of squash casserole!

Easy Stovetop Squash Casserole
Ingredients
- 4 large squash diced
- 1 large onion diced
- 2 tbsp butter
- 1/2 c water
- 1/2 tsp Italian seasoning
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 cup sour cream
- 1/2 cup cheddar cheese shredded
- 1/2 cup Parmesan cheese
- 10-12 Ritz crackers crumbled
Instructions
- Slice onion and yellow squash. Add 1/2 cup water to Dutch oven and add salt, pepper, Italian seasoning, and garlic powder.
- Boil onion and squash until fork tender, 10-12 minutes.
- Remove from heat. Add sour cream, butter, shredded cheddar cheese, Parmesan cheese, and Ritz crackers.
- Serve warm!
