Do you need a super easy Mexican chicken soup recipe? I recently ordered a cup of my favorite chicken soup from our local Mexican takeout place, and I went on a mission to recreate it! Cheaper and a bit less salty, plus I can make it for my whole family! I think this recipe was pretty successful, so I hope you love it too!
It is a great way to use shredded chicken, either from your slow cooker, Instant Pot, or a grocery store rotisserie chicken. Filled with delicious veggies and warm chicken broth, it’s a great recipe that your whole family will enjoy!
What do I need for easy Mexican chicken soup?
- 3 chicken breasts, diced and sauteed (or shredded)
- olive oil
- kosher salt and black pepper
- 1 tsp ground cumin
- 1 tsp garlic powder
- 2 onions, diced
- 4 carrots, diced
Saute cubed chicken in olive oil with diced carrots and onions in a Dutch oven over medium heat. Add cumin and garlic powder. Cook until onions are translucent and softened and chicken pieces are cooked through.
Next, add the following to your chicken and favorite veggies.
- 2 small cans of green chilies (undrained)
- 1 quart of chicken stock (full carton)
- 1 can of diced tomatoes (undrained) (Add fire-roasted tomatoes, if you like a little heat.)
- 1 can of corn (undrained)
- 1/4 cup of rice
- 1/4 cup of chopped fresh cilantro
Add green chiles, chicken broth, rice, diced tomatoes, corn, and cilantro. Allow to simmer for at least 30 minutes.
What can I serve with chicken tortilla soup?
This is an easy recipe to add more layers of flavor with your favorite toppings. I like to serve the soup in large bowls with tortilla chips, shredded cheese, a dollop of sour cream, lime wedges, and fresh avocado. The lime juice from a squeeze of lime gives a little extra acidity that I love!
It is a great way to warm up on a cold day. If you have some fresh warm corn tortillas, slice them into tortilla strips and add them directly to the soup pot. Mexican tortilla soup is such a comforting soup!
What different ways can I cook the chicken for traditional Mexican chicken soup?
There are several different options when prepping the chicken for healthy Mexican chicken soup. I usually cut the raw chicken breasts into bite-sized pieces and saute them in my large Dutch oven or large saucepan with some extra virgin olive oil. However, you can also use some leftover rotisserie chicken from the grocery store!
You can also build a whole chicken in a large pot with water and seasonings. Simply boil the chicken over medium-high heat until cooked through. This makes a fantastic tender chicken with a flavorful broth.
Another great option is roasting your chicken. Simply use boneless chicken breast or tenderloin pieces or bone-in chicken thighs (skin side up). Simply put the chicken on a sheet pan, and add some olive oil, salt, and pepper. Roast in a preheated oven until cooked through. Be sure to add some additional cooking time, if you use bone-in chicken, as it takes a bit longer to cook than the boneless options.
What spices can I use for a flavorful soup?
If you don’t have cumin or garlic powder on hand, no worries! Sprinkle the chicken with some chili powder or taco seasoning, along with salt and pepper to add great flavor. Do you like heat? Add some red chili flakes or cayenne pepper.
If you are watching your salt intake, consider using low-sodium chicken broth for a healthy soup option. Sauteing the carrots and onions will also help make a flavorful soup.
